Shellfish

There are both vague and specific notions out there of what shellfish are, and neither notion is necessarily wrong. It's got a shell, so it's a shellfish, right? Exactly, keep it simple stupid. But for the sake of complicating things, "shellfish" is both a culinary and fisheries term used to describe certain aquatic invertebrates that have an exoskeleton. This term often overlaps with the more scientific classification of crustacean, but in this case there will be a separate section of the site devoted to crustaceans. Here is a list of, and some subsequent information on, a diverse group of edible molluscs (excluding cephalopods) and a few echinoderms.
